Zab Bite opened in fall 2023 at 4197 Fraser Street as a casual room for E-Sarn (northeastern Thai / Isaan) cooking, the chile-lime-herb tradition that sits closer to Laos than to coconut-curry Bangkok menus. Chef Percy Tanwattanaku, who cooked at a family resort kitchen and later in Bangkok before Vancouver, leads a small ownership group that includes Warisara Laohongvichit; the house line is to keep heat and funk honest rather than sand them down for mild palates.
